IRISH STEW
Ingredients:
- Mutton - 500 gm (cut into one inch cubes)
- Butter - 1 tbsp
- Ginger - 5 pieces (thinly sliced)
- Button onions - 250 gm
- Celery - 1 stick (cut into one inch pieces)
- Bay leaf - 1
- Cinnamon - 1inch piece
- Cloves - 2
- Carrots - 1/4 cup (thinly sliced)
- Potatoes - 1 cup (sliced)
- Pepper corns - 5
- Turnips - 1/4 cup (sliced)
- Green peas - 1/4 cup
- French beans - 1/4 cup
- Mutton stock - 3 cups (or) water
- Cornflour - 3 tbsp
- Milk - 1 cup
- Sugar - 1 tsp
- Salt and Pepper to taste
Method:
In a large bowl marinate mutton, ginger, cinnamon, pepper corn, celery, onions, salt , pepper powder and bay leaf for 20 minutes. Microwave covered for for about 30 minutes.
Stirring once in between. Stir in all the other ingredients and microwave on 90 % power for 20 minutes or until mutton is tender, stirring in between two or times.
Let is stand for 5 minutes. Mix cornflour with milk and sugar and stir it into the mutton mixture. Microwave for 10 minutes at 50% power stirring in between so that the mixture does not get lumpy. Serve hot.
