 IRISH STEW


Ingredients:

  • Mutton  - 500 gm (cut into one inch cubes)
  • Butter - 1 tbsp
  • Ginger - 5 pieces (thinly sliced)
  • Button onions - 250 gm
  • Celery - 1 stick (cut into one inch pieces)
  • Bay leaf - 1
  • Cinnamon - 1inch piece
  • Cloves - 2
  • Carrots - 1/4 cup (thinly sliced)
  • Potatoes - 1 cup (sliced)
  • Pepper corns - 5
  • Turnips  - 1/4 cup (sliced)
  • Green peas - 1/4 cup
  • French beans - 1/4 cup 
  • Mutton stock - 3 cups (or) water
  • Cornflour - 3 tbsp 
  • Milk - 1 cup
  • Sugar - 1 tsp
  • Salt and Pepper to taste

Method:

In a large bowl marinate mutton, ginger, cinnamon, pepper corn, celery, onions, salt , pepper powder and bay leaf for 20 minutes. Microwave covered for for about 30 minutes.

Stirring once in between. Stir in all the other ingredients  and microwave on 90 % power for 20 minutes or until mutton is tender, stirring in between two or times.

Let is stand for 5 minutes. Mix cornflour with milk and sugar and stir it into the mutton mixture. Microwave for 10 minutes at 50% power stirring in between so that the mixture does not get lumpy. Serve hot.
